Harvesting is by hand, a cold soak infusion is employed on some of the parcels, and the wild yeast fermentation and levage is in tank. The vines are also farmed biodynamically. Again, this sings. But now with a more fleshy personality and blackberry and nettley fruit notes. More pulpy in texture there is still the classic mouthwatering freshness and drive that you expect of this level of Saumur.
