Naveran Cava Dama de Barcelona 2022 Grower Champagne fermented with indigenous yeasts andDama is Naveran's flagship, and it deliberately breaks the Cava mold: 85% Chardonnay with a splash of Parellada, rather than the usual Catalan trio. The Chardonnay is grown on the family's organic estate in the high Peneds and gives the wine real flesh orchard fruit, a creamy texture, a fine and persistent bead while the Parellada keeps it airy instead of heavy. A minimum of 18 months on the lees, often longer, builds a hint of pastry underneath.
